Hi friends! Today I’m sharing one of my favourite happy accident recipes – a soft, chewy, Papa Murphy’s inspired white pizza dough made right in the bread machine.
This dough was created by accident when we used half bread flour and half all purpose flour instead of the flour I had originally planned. The result was the perfect texture. Chewy where it needs to be, soft where you want it most, and incredibly similar to the classic Papa Murphy’s take and bake crust my husband loves.
The bread machine does all the hard work for you. It mixes, kneads, and rises the dough so you can enjoy an easy homemade pizza night without the stress. This recipe is flexible, freezer friendly, and perfect for busy weeks, game days, or budget friendly Friday nights at home.

A pizza stone can help give that classic artisan style crust with a slightly crisp base and chewy interior, especially when baking at higher temperatures.

Ingredients (makes 1 very large 18-inch pizza crust or a few personal ones):
• 1 ¼ cups warm water
• 1 tbsp honey
• 2 ¼ tsp active dry yeast
• 2 tbsp olive oil
• 2 tsp Italian seasoning (optional)
• 1 ½ cups bread flour
• 1 ½ cups all purpose flour
• 1 tsp salt

1️⃣ Add the warm water, honey, and yeast to your bread machine pan and stir gently. Let sit for 5 to 10 minutes until foamy.
2️⃣ Add the olive oil and Italian seasoning.
3️⃣ Add the bread flour and all purpose flour on top without mixing. Make a small well in the flour and add the salt, lightly covering it so it does not touch the yeast too early.
4️⃣ Insert the pan into the bread machine, select the Dough cycle, and press start. Allow the machine to fully knead and rise the dough.
5️⃣ When the cycle finishes, remove the dough. It can be used immediately, refrigerated overnight, or frozen for later use.
6️⃣ To bake immediately - roll the dough out on parchment paper or a floured surface, add your favourite sauce and toppings, and bake as shown in the video:
• With a pizza stone: 500°F for 6 to 8 minutes
• Without a pizza stone: 400°F for 15 to 20 minutes
Remove from the oven when golden and baked through, slice, and enjoy.

Baking Options:
Bake Fresh:
• Roll dough on parchment or a floured surface
• Bake on pizza stone at 500°F for 6 to 8 minutes
• Or bake without a stone at 400°F for 15 to 20 minutes
Bake From the Fridge:
• Refrigerate dough up to 24 hours in a lightly oiled bag
• Rest at room temperature 20 to 30 minutes before rolling
• Bake as above
Bake From the Freezer:
• Freeze dough up to 2 months
• Thaw overnight in the fridge or 2 to 3 hours at room temperature
• Roll, top, and bake as usual
