Lights, Camera, Action! Let the final round of interviews for the documentary commence.
This past week, we wrapped up the last round of interviews featuring Bradley Michael, Callie van der Merwe, and Roberto Zambri.
Bradley reflects on his experience of the build— from his first visit to the site, through seeing the design come to life, to now operating as the destination restaurant in Sydney’s CBD. He shares the challenges and triumphs of the journey, recalling the moment the doors first opened and how the space was received by guests. His perspective provides a unique insight into the transition from concept to reality, highlighting how the design choices have impacted daily operations and the overall customer experience.
Callie shares his thoughts on Design for Behaviour and the principles that shaped the restaurant’s design process, highlighting key factors considered in this project. He delves into the psychological impact of spatial design, explaining how subtle environmental cues influence guest behaviour, comfort, and perception of the space. His reflections emphasise the importance of designing not just for aesthetics, but for human interaction, emotion, and a truly immersive dining experience.
Roberto discusses the journey of taking the design forward with the teams, touching on processes, materials, functionality, and operations while also exploring the concept of capturing nostalgia in the design. He elaborates on the careful selection of materials and finishes that evoke a sense of familiarity and warmth, creating an atmosphere that resonates with both new and returning guests. Additionally, he highlights the collaborative effort involved in bringing the vision to life, balancing creative ambition with practical execution to ensure a seamless fusion of form and function.
