If you've never made a pickle before, then this is the perfect recipe to start with. It's easy to follow and it will leave you with a delicious finished product. Cauliflower pickle is a delicious and tangy condiment made with cauliflower florets, spices, and lemon juice. Here's a simple recipe you can use to make cauliflower pickle at home:

Ingredients:

• 1 medium-sized cauliflower, cut into small florets
• 2 tablespoons mustard seeds
• 1 tablespoon fenugreek seeds
• 1 tablespoon turmeric powder
• 1 tablespoon red chili powder (adjust according to spice preference)
• 1 tablespoon salt (adjust to taste)
• 1 cup lime juice
• 250ml vegetable oil
• 3-5 dry chilies
• Fresh curry leaves (optional)

Instructions:

1. Wash the cauliflower thoroughly and cut it into small florets. Place the florets in a bowl.
2. Boil water by adding salt and turmeric once boiled switch off the flame and then dip this florets for 1 min( here we are not cooking the cauliflower just blanching the cauliflower)
3. In a dry skillet over medium heat, lightly roast the mustard seeds, fenugreek seeds for a couple of minutes until they become fragrant. Allow them to cool down a bit, then grind them into a coarse powder using a spice grinder or mortar and pestle.
4. In a large mixing bowl, combine the cauliflower florets with the ground spice mixture, red chili powder, salt and lime juice. Mix well so that the cauliflower is evenly coated with the spices.
5. Heat vegetable oil in a pan over medium heat. Add fenugreek seeds, Mustard seeds, jeera, dry chili and curry leaves sauté until it turns golden brown and keep aside for 5 mins
6. Add this tempering oil to the cauliflower mixture and mix all well together let the pickle cool down to room temperature and keep aside for 1 day by covering lid.
7. Transfer the cauliflower pickle to a sterilized jar or airtight container. Seal the jar tightly and let it sit at room temperature for a day to allow the flavors to develop.
8. After a day, store the cauliflower pickle in the refrigerator. It will continue to develop flavor over time and can be stored for several weeks.
Note: Make sure to use clean, dry utensils and a sterilized jar to prevent any spoilage. Adjust the spices and seasoning according to your taste preferences. This pickle goes well as a condiment with rice, bread, or as a side to complement various dishes.
