INGREDIENTS to marinate( Smokey BBQ biryani):
Chicken 1 KG
Coriander Powder 2 tbsp
Cumin seeds 1 tsp
Salt 1 tsp or to taste
Chili flakes 1 tbsp
Turmeric powder ½ tsp
Chicken Tikka Masala 2 tbsp
Garlic Paste 2 tbsp
Ginger Paste 2 tbsp
Yogurt 2 tbsp
Lemon Juice 2 tbsp
Food color ½ tsp
Cooking Oil 1 cup (to fry chicken pieces)
INGREDIENTS to make (gravy for smokey BBQ Biryani):
1. Olive Oil ½ cup
2. Onions 2 to
3. Ginger paste 1 tbsp
4. Tomatoes 4 to 5
5. Cloves 8 to 10
6. Black cardamom 2
7. Green cardamom 5-6
8. Star anise 1
9. Bay leaf 2
10. Cinnamon stick 2
11. Coriander powder 1 tbsp
12. Salt (to taste)
13. Red chili powder 1 tsp
14. Turmeric powder ½ tsp
15. Rice (soaked & boiled) 1 kg
16. Green chilies
17. Cilantro(green coriander
18. Food color
19. Fried onion
20. Lemon juice ½
DIRECTIONS for smoky BBQ Biryani:
1. Take a bowl and add Chicken 1 kg, Coriander Powder 2 tbsp, Cumin seeds 1 tsp, Salt 1 tsp or to taste, Chili flakes 1 tbsp, Turmeric powder ½ tsp, Chicken Tikka Masala 2 tbsp, Garlic Paste 2 tbsp,Ginger Paste 2 tbsp, Yogurt 2 tbsp, Lemon Juice 2 tbsp, Food color ½ tsp mix well and marinate for 20 minutes .
2. Heat a pan add 1 cup of cooking oil add chicken pieces for( smokey BBQ chicken Biryani) and fry for 15 minutes, then cover & cook for 15 minutes on medium flame.
3. Heat another pan and add ½ cup of olive oil add 2-3 onion and fry till golden brown, add ginger paste 1 tbsp, tomatoes 4-5, cloves 8-10, black cardamom 2, green cardamom 5-6, star anise 1, bay leaves 2, cinnamon sticks 2, coriander powder 1 tbsp, salt( to taste), red chili powder 1 tsp, turmeric powder ½ tsp mix well and cover and cook for 5 minutes on low flame.
4. Add chicken and mix it well
5. Place burning coal in the pan on foil and pour some oil on the coal to give coal smoke for 2 minutes.
6. After two minutes, remove coal and add a layer of ½ kg boiled rice, add some green chilies, cilantro and some food color, fried onion, and ½ lemon juice.
7. Cover and steam cook for 10-20 minutes.
Delicious smokey BBQ chicken Biryani is ready to eat.
