Ingredients:-
Milk- 150 ml/ 5.1 ounces/ 3/4 cups
Sugar- 40g/ 1.40 ounces/ 0.2 cups
Instant dry yeast- 6g/ 2 tsp
Eggs- 2 nos/ 55g each= Total 110g
Bread flour- 400g/ 3.3 cups/ 14.10 ounces
Milk powder- 2 tbsp/ 20g
Salt- ½ tsp/ 3g
Unsalted butter - 30g/ 0.13 cups/ 1.1 ounces

methods:

1-Mix Wet Ingredients
In a bowl, combine lukewarm milk, sugar, and instant dry yeast. Stir until dissolved. Add eggs and mix well until fully combined. If using active dry yeast, activate it in warm milk with sugar until frothy.
2-Prepare Dry Ingredients
Sift bread flour into a large mixing bowl. Add milk powder for richness (optional) and a pinch of salt. Mix everything with a spatula to combine.
3-Make the Dough
Pour the wet mixture into the dry ingredients. Using a stand mixer with a dough hook, knead on low speed until the dough starts forming. It may look sticky—don’t add flour yet.
4-Incorporate Butter
Gradually add softened unsalted butter while kneading. Allow each piece to fully absorb before adding the next. Knead until the dough becomes smooth, soft, and elastic.
5-Check Dough Readiness
Use the windowpane test—stretch a small piece of dough. If it doesn’t tear and light passes through, the gluten is well-developed. If not, knead a bit longer and test again.
6-Shape the Dough
Divide the dough into even portions using a kitchen scale. Roll each piece into a tight, smooth ball. For ring donuts, flatten slightly and poke a hole in the center, stretching gently.
7-Proof the Donuts
Place shaped donuts on a floured tray, leaving space between them. Let them rise in a warm spot until doubled in size—this usually takes 1.5 to 2 hours. but in summer or warm kitchens, 30 minutes to 1 hour may be enough.The dough should spring back slowly when pressed.
8-Fry the Donuts
Heat oil to the right temperature(160°C (320°F) and gently place in the donuts, 2–3 at a time. Fry until golden brown—about 2 minutes per side. Flip only once to get a clean, perfect white ring.

important tips:-

1. Soft and Elastic Texture: The dough must be smooth, soft, and elastic to puff up properly during frying.
2.Uniform Shaping: Roll smooth dough balls and stretch holes for ring donuts. Consistency ensures even frying.
3.Proper Proofing: Proof dough until it doubles in size and springs back slowly when pressed. Avoid over proofing to prevent collapse during frying.
4. Ideal Frying Temperature: Maintain oil around 160°C (320°F). Too hot or too cool oil affects puffing and the white ring.
5.Flip Once: Fry each side to achieve an even white ring
