If you love Tuscan Salmon, but not all the extra calories, then this Creamy Tuscan Salmon recipe is for you. It is still creamy and delicious but uses no heavy cream, saving you over 600 calories!

My Tuscan Salmon is only 209 Calories, with whole wheat linguini it's still only 398 calories. This is a fantastic meal that will feed the whole family, is under 500 calories, and great for living a healthy lifestyle or weight loss!

✅ INGREDIENTS
24 oz salmon cut into 4 portions
2% milk
cornstarch
butter
olive oil
2 cloves garlic
spinach fresh & chopped
cherry tomatoes sliced in half
sun-dried tomatoes
parmesan cheese fresh grated
salt pink himalayan
ground black pepper


✅ Instructions for Salmon
00:07 chop spinach
00:09 chop tomatoes
00:17 Slice salmon into 4 fillets
00:30 preheat pan on medium heat & spray with olive oil
00:35 add salmon fillets skin side down
00:40 sprinkle with salt and pepper
00:45 saute and cover for 5 minutes then flip
01:00 saute another 2 minutes covered and remove skin (optional)
01:13 remove salmon filets from pan

✅ Instructions for Tuscan Sauce
01:20 add garlic butter to pan
01:25 make cornstarch slurry
01:35 add milk and cornstarch slurry
01:56 add parmesan cheese & salt and pepper
02:12 add cherry tomatoes, spinach, and sundried tomatoes
02:35 add salmon back to pan



Tips & Notes:
soak your sundried tomatoes in water for 1-2 hours to soften them.
Enjoy with whole wheat pasta, broccoli, or a nice side salad.
