Russet potatoes (Idaho) are baked in the oven, until tender. The flesh is scooped out of the skins, mashed and mixed with milk, butter, and with sour cream and then 'Loaded' with cheese, bacon (cooked, crispy) and green onions (scallions). The delicious, creamy, mashed potatoes are then stuffed back into the baked potato skins, topped with more cheese and bacon and then cooked in the oven again, until the cheese is melted and bubbly. The 'ultimate' side dish recipe for dinner, a special occasion or served for lunch on a cold day with a hot bowl of soup.
