Low Net Carb Bamboo Fiber Pigs In A Blanket Recipe – Made of Bamboo Flour, Keto And Gluten Free

Full Recipe
100g bamboo baking flour (80g bamboo fiber and 20g powdered whole psyllium husk)
1/2 tsp fine salt
1 tsp sweetener (optional)
2 tsp baking powder
170g room temperature water,
3 large room temperature eggs (about 55g of each)
(Add only 2 eggs if you are using Zimmermann brand bamboo fiber).
30g unsalted butter
3 tbsp ketchup
1tbsp dijon mustard
1cup shredded mozzarella
6 pieces hot dog sausage

How to make bamboo baking flour:

Steps:
Place all the dough ingredients in a mixing bowl:
80g of bamboo fiber (Nunaturals brand),
20g of whole psyllium husk.
It is very important to use pure psyllium husk with at least 90% purity to achieve good results.
Or if you have premixed bamboo baking flour, use 100g of it. (80g of bamboo fiber + 20g of ground whole psyllium husk).
1/2 tsp of fine salt,
1 tsp of sweetener (optional),
2 tsp of baking powder,
170g of room temperature water,
3 large, room temperature eggs (about 55g each),
(Add only 2 eggs if you are using Zimmermann brand bamboo fiber).
and finally add 30 g of melted unsalted butter.
Mix them thoroughly with an electric mixer until the dough becomes elastic (about few minutes).
Scrape the bowl if needed.
Then place the dough onto a silicone mat, using a small amount of bamboo fiber, roll lightly with your hands for a few seconds to get a smooth and nice texture.
Form the dough into a rectangle (that is about 13”×16” or 33x41cm).
Spread 3 tbsp of ketchup (no sugar added) and about 1 tbsp of dijon mustard evenly.
Sprinkle around 1 cup of mozzarella cheese.
Place the hot dog sausages along the two long edges of the dough.
You can use your favorite flavor – pork sausages, chicken sausages, lamb sausages, or beef sausages.
Then roll the sausage toward the center of the dough.
Cut the sausage rolls with a sharp knife into the desired length.
Then place the rolls on a baking sheet, brush the tops with egg wash, and sprinkle with shredded mozzarella.
Bake at 370°F (190°C) for 20–25 minutes, until the dough and cheese on top are golden brown.

Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time. 
Transfer to a wire rack and let cool.
