Red Lunchbox Series Episode 2 🍱🥪

Filling
1 medium potato boiled
1/3 cup boiled shredded chicken
1/2 cup onion finely chopped
1/2 cup capsicum finely chopped
1/2 cup carrots finely chopped
2 tbsp green onions (green part)
2 tbsp chopped coriander
1 to 2 tbsp mayonnaise
1 tsp salt
1 tsp black pepper
1/2 tsp oregano
Handful shredded mozzarella cheese

Frying
Bread slices
1 egg
Salt & pepper
Cooking Oil for frying

• Mix all the ingredients for the filling & set aside
Make sandwiches in any bread of your choice. Cut them in your desired shape
Whisk the egg with salt & pepper. Dip the sandwiches in the eggs
Fry on medium high flame till golden & crispy. Make sure to fry all sides
