Well I have some news...I am pregnant, which I am sure you can already tell from the video!! That also explains why I couldn't upload consistently last fall - I was so sick all day long that I couldn't even think about uploading! But I am back and I promise to be here each week, if not more.

This one pot pasta with sun dried tomatoes and burrata is one of my favorites these days and was inspired by the Martha Stewart one pot pasta. If you haven't seen it, here is the link, you should check it out!

This tasty recipe is perfect for weeknight suppers. If you want to make this dish completely vegetarian, make sure to buy vegetarian Parmesan cheese, I get mine at Whole Foods.

One Pot Pasta with Sun Dried Tomatoes and Burrata
1 lb. penne pasta (or other small bite-sized pasta)
1/2 onion, diced
1 cup crushed tomatoes
1 - 8.5 oz. jar sundried tomatoes, drained
1 large or 2 small Parmesan cheese rinds
kosher salt
4 oz. burrata
Garnish with basil and Parmesan cheese
In a large pot add the pasta, onion, tomatoes, sun dried tomatoes, parmesan cheese rind, and large pinch of salt. Add 5 cups of water and bring mixture to a boil. Once the pasta is at a boil, reduce heat to medium and continue cooking for about 9 to 12 minutes or until the water is mostly absorbed and the pasta is cooked through.

Fold in burrata and another pinch of salt. Remove Parmesan cheese rind and garnish with basil and Parmesan cheese.

Serves warm.

Makes 4 servings.
