Achaari Missi Roti:
A unique and flavoured flatbread recipe made with wheat and chickpea flour. it is popular in North India particularly in Punjab and Rajasthan. It is generally served as it is, as it contains all the necessary spices, but can be served with any choice of North Indian creamy curry or even Dal.

Indian flat bread recipes are known for its flavour and the distinct ways it can be done. The most famous one is either stuffed one like paratha or kulcha or the day to day roti or chapati. But then there is another simple and spiced roti known as missi roti which is a mix of wheat flour and besan.

Ingredients:
I. For Roti Dough:
1 cup Whole Wheat Flour
1/4 cup Besan (Gram Flour)
2 tbsp. Ghee
Salt to taste
Water as required

II. For Filling:
2 tbsp. Malai
2 tbsp. Achaar Masala
1/2 tsp. Chaat Masala
1/4 tsp. Jeeralu
1/2 tsp. Ajwain
1 tsp. Til (White) (Sesame Seeds)
Pinch of Salt

Method:
I. For Roti Dough:
1. In a big mixing bowl add whole wheat flour.
2. Now add besan (gram flour) ghee and salt and mix well.
3. We have to knead a soft dough out of it, so add water little by little and knead well.
4. Once the dough is kneaded, apply some ghee over it, cover it and keep it aside for 10 minutes.
5. Divide the dough into 8-10 equal parts.

II. For Filling:
1. In a mixing bowl add malai.
2. Now add achaar masala, chaat masala, jeeralu, ajwain, til (sesame seeds) and a pinch of salt and mix well.

III. For Achaari Missi Roti:
1. Take one of the dough balls and using your rolling pin roll it into a circle. Use dry wheat flour while rolling your roti so that it doesn't stick to the rolling pin or board.
2. Place 1-2 tablespoon of filling in the center and spread it all over the roti.
3. Now start creating pleats by folding the roti with the help of fingers.
4. Flatten the dough ball using your hands.
5. Stretch the pleated roti dough as much as possible.
6. Begin to roll the pleated roti dough like a swiss roll and secure the end by pressing gently.
7. Take the rolled ball and dust with some wheat flour.
8. Now using your rolling pin, roll the dough to a circle of 7-8 inch diameter.
9. Transfer the rolled roti onto the hot tawa.
10. Cook the side for a minute or two and then flip over. Apply ghee (around 1/4 teaspoon) on the half-cooked side and flip again.
11. Now apply ghee on the other side as well. Press with a spatula and cook the roti till both sides have golden brown spots on them.
12. Repeat with the remaining dough balls.
13. Serve Achaari Missi Roti hot with some curd, red chilli sauce, Panchkuti Dal or subzi!
