You must have a HDR compatible display to watch HDR content. You will see a HDR icon next to the resolution in the resolution tab on YouTube. If it says HDR you're good to go!

I will only upload a short video of HDR content of every game I play that has HDR as an option, that's because not all have access to an HDR display. Full Gameplays/Let's Plays always has SDR.
