Wattle is the national flower of Australia. Wattleseed though was an important food resource for indigenous Australians and something that is only just starting to make its way into mainstream cooking. Today I'm utilising these seeds to give the classic Portuguese tart a little Aussie twist. Ive been growing some wattle plants for the last two years now and finally this year they flowered, those flowers have turned to seed pods which have dried and are now ready to harvest. Let's experiment together with these seeds and figure out how we can utilise them to create this tasty pastry.
