If you love chocolate chip muffins you NEED to try this healthy, yet insanely delicious chocolate chip muffin recipe. You’ll never believe these chocolate chip muffins have silken TOFU in them! You absolutely CANNOT taste the tofu and it elevates the texture of these muffins by acting as an egg replacement making them so moist! I LOVE chocolate and I love that this recipe adds a nutritional element at the same time. This chocolate chipp muffin recipe is fully vegan and refined sugar free, but you can use regular milk and butter. We love taking these muffins on the go or eating them as a quick and easy breakfast in the morning before rushing out the door. I often make them on Sunday and we enjoy them throughout the week. Ingredients:
6 oz of silken tofu (pat dry)
1/4 cup of milk (I used oat milk)
4 oz. melted butter (I used dairy free)
¼ cup maple syrup if using ½ cup mini chocolate chips OR between 1/3- 1/2 cup of maple syrup if using less
1 tsp. vanilla extract
½ cup of white whole wheat flour
½ cup of almond flour (blanched)
1 tsp baking soda
1 tsp baking powder
Pinch of salt
Chocolate chips (anywhere between 1/3 cup-1/2 cup) depending on how chocolatey you prefer (I used dairy free mini chocolate chips)

Instructions:
1. Blend all wet ingredients in a blender. (Silken tofu, oat milk, melted butter, maple syrup, vanilla extract)
2. In a large bowl, mix together flours, baking powder, baking soda, and salt. 3. Make a well in the middle of the bowl with the dry ingredients.
4. Pour wet ingredients into dry and mix until just blended ensuring everything is well incorporated.
5. Fold in chocolate chips.
6. Pour batter into a muffin pan with liners. You can sprinkle brown sugar on top for a little extra sweetener/crispy top but it’s not necessary.

Bake at 350 for approx. for 16-18 minutes
Yield: 12 muffins
