Hey everyone! I'm back in my own kitchen after being away for a couple months visiting family! Today I clean out my fridge and restock it with all fresh healthy foods! I meal prep some grain/ veggie/ tofu bowls for lunch, make healthy no bake brownie bites and dressing for my bowls.

farro steps-
1 1/2 cups farro (1 bag from TJ's)
1/2 cup dry brown lentils
4 cups water
2 tbsp seasoning blend of your choice
pressure cook 8 minutes instant pot, natural release for ~22 minutes

mushroom teriyaki baked tofu recipe per 2 blocks of tofu
firm tofu cut into cubes- don't pat it dry
2 tbsp corn starch
1/2 cup almond flour
bake 425 for 25 minutes or until golden and crispy, flip halfway through
marinade-
1/4 cup coconut aminos
2 tbsp date syrup or coconut sugar
2 tsp mushroom seasoning
1 tbsp soy sauce
toss baked tofu in sauce, then bake another 5 minutes

brownie bites
14 pitted medjool dates
1 scoop (~1/4 cup) vanilla protein powder (optional) or sub vanilla extract
1/2 cup walnuts
1/4 cup almond butter
1 tbsp ground flax seeds
1/3 cup cocoa powder
pinch of salt(optional)
2 tbsp almond or soy milk
blend all ingredients in food processor, use an ice cream scoop to roll into balls

garlic ginger turmeric sauce
2 inch piece of fresh ginger
2 cloves garlic
2 tbsp lemon juice
1 tbsp low sodium soy sauce
1/4 cup raw cashews (or sub tahini)
1/4 tsp turmeric powder
1/2 - 3/4 cup soy milk (depending how thin you want it)
optional 2 tbsp extra virgin olive oil
blend all ingredients together til smooth!
