1. Wash the shiitake mushrooms and remove the mushroom stems.

2. Finely chop the mushroom stems and set aside.

3. In a bowl, mix pork with salt, cooking wine, light soy sauce, chicken bouillon powder, white pepper,corn starch, and egg white.

Add chopped green onion, ginger, carrots, and chopped mushroom stems to the mixture. Stir well.

Finally, add sesame oil and mix well.

4. Sprinkle some flour on the shiitake mushrooms.

5. Fill each mushroom cap with a spoonful of the meat mixture, pressing it down gently and smoothing the edges.

6. Heat oil in a pan and fry the stuffed mushrooms until golden brown on the sides.

7. Transfer the mushrooms to a plate and steam them over medium heat for 12 minutes.

8. Once steamed, drizzle with light soy sauce and garnish with chopped green onion and red pepper.

9. Finish by pouring hot oil over the mushrooms before serving.
