Looking for a healthier alternative to white rice congee? Black rice (also called forbidden rice or purple rice) is one of the most nutritious variants of rice available and it makes a killer congee! Using a pressure cooker, like an Instant Pot, makes it that much easier to cook. You can mix and match the toppings according to your taste. The possibilities are endless!

Ingredients:
1/2 cup black rice
500ml water/stock
6-8 dried mushrooms (or fresh mushrooms)
5cm piece of ginger, sliced
2 whole garlic cloves
2 eggs
1 medium chicken breast, sliced
1 tbsp soy sauce
1 stalk spring onion
1 tbsp oyster sauce
2 tsp cornstarch
1 tsp vegetable oil
Salt and pepper to taste
Sesame seeds (for garnish)

Directions:
1. Soak the dried mushrooms for at least an hour (or skip this if you're using fresh mushrooms).
2. Cut the chicken into thin slices and marinate with oyster sauce, soya sauce and cornstarch. Mix it around and let it sit for a few mins. Then add vegetable oil and mix around for another few mins. Set it aside to marinate.
3. Wash the rice a few times and discard the water.
4. Add the rice, water or stock, ginger, mushrooms and garlic to the pressure cooker and cook for 40mins on the congee setting. Keep some mushrooms and ginger aside for garnishing.
5. While that's pressure cooking, stir fry the chicken, the mushrooms and boil the eggs.
6. When the pressure cooker is done, open and add salt to taste. If too thick, add some water. If too runny, let it boil off a bit. If the rice is not broken enough, add water and boil more and whisk it to break it all up.
7. Dish into a bowl and top off with chicken, mushrooms, ginger, sesame seeds, hardboiled eggs and pepper.
