✅ ROASTED SWEET POTATO SOUP INGREDIENTS

2½ lbs sweet potatoes, cut in half
1 tablespoon olive oil, plus extra
½ cup finely chopped shallots, or onions
1 teaspoon grated ginger, fresh
½ teaspoon cayenne pepper, or any mild red pepper, finely chopped
½ teaspoon ground cardamom, preferably freshly ground
¼ teaspoon nutmeg, freshly ground
⅔ teaspoon salt
½ teaspoon ground black pepper
4 cups water
1 sprig rosemary, fresh
1 cup coconut milk
1 tablespoon maple syrup, optional
Additional salt and black pepper, to taste
2 teaspoons brown butter or ghee, optional
3 tablespoons Parmesan cheese, optional
