Beef Stock recipe

Ingredients:
- 4 lbs steak
- 5 lbs short ribs (cut in 3 inch pieces)
- 1/2 stock celery (cut in 1 inch pieces)
- 1 lb baby carrots
- 4 whole carrots peeled (cut in 1 inch pieces)
- 2 medium onions peeled + cut in quarters
- 1 cup red wine
- Salt and pepper
- 3 Roma tomatoes quartered
- 1/2 cup fresh basil leaves
- 4 sprigs thyme
- 2 sprigs rosemary
- (2) 48 oz container of beef stock

Procedure:
STEP 1 - Put all ingredients on sheet pan, mix up
STEP 2 - Salt and pepper (NOTE: drizzle with vegetable oil)
STEP 3 - Put sheet pan in oven at 400 degrees on middle rack
STEP 4 - Leave till brown (about 15-20 mins)
STEP 5 - Take sheet pan out of oven, turn bones over, mix up
STEP 6 - Put back in oven till brown
STEP 7 - Take out of oven, put in stock pot, brown bones on top of stove , drizzle with vegetable oil
STEP 8 - Add vegetables to stock pot
STEP 9 - Add 1 cup red wine
STEP 10 - Add beef stock, bring to boil, then trim heat to low, simmer to 7 hours, skim fat off top every hour or so
STEP 11 - Strain vegetables and beef from stock, save and cool
STEP 12 - Put stock in cooler overnight, next day skim fata off top, freeze stock and enjoy :) (break out when needed)
