Operating since 1596, Toshimaya Shuzo Sake Brewery in Higashimurayama City is one of the oldest sake breweries in Tokyo. Come along with byFood host Shizuka Anderson to discover this historic sake brewery, learn how the Japanese rice wine is made, and find out what lies in Toshimaya Shuzo’s rickety old attic. At the end, Shizuka enjoys a sake tasting of 5 different types of Japanese sake (referred to as “nihonshu” in Japanese), including several types of junmai sake, which is made from only rice, koji, and water.

SAKE TASTING:

Kinkon Yamahai (金婚 山廃純米)
Kinkon Yamahai is an unfiltered raw junmai sake made using special Edo yeast. It has both sweet and bitter flavors.

Junmai Ginjo No Filtration Original Sake(純米吟醸無濾過生原酒)
This is a limited edition, seasonal sake from Toshimaya Shuzo with a fresh and light taste.

Juemon Junmai Origarami Sake (純米無濾過”生”原酒 十右衛門 おりがらみ)
A refreshing, unfiltered, Japanese sake with a natural sweetness, Juemon Junmai Origarami sake is easy-to-drink. Origarami sake is a type of Japanese sake that is not filtered, so the sake is slightly cloudy in appearance with visible rice particles.

Kinkon kijōshu (金婚 貴醸酒)
This is an aged sake, with sweet caramel-like flavors and aromas, made using sake instead of water. It can be served as a dessert sake.

Chomiryo Mirin(天上味醂 心)
Mirin, a sweet sake which is often used in Japanese cooking. Toshimaya Shuzo’s mirin is naturally sweet, made without any additional sugar.
