Challah Recipe

207ml warm water
5g Active Dry Yeast
30g sugar
60g honey
60g room temp butter
8g salt
250g all purpose flour
250g bread flour
2 eggs

Egg wash
1 egg
2 teaspoons of milk or water

1.Bloom yeast in warm water
2. Whisk eggs followed by sugar and honey into yeast mixture
3. Measure out flour in separate bowl along with salt
4. Combine yeast mixture with flour using mixer, allow it to come together for about 4 minutes on medium speed.
5. Add in butter while mixing, allow another 8-10 minutes for gluten to develop.
6. Dough should be shiny and sticky. Grease bowl with butter and place dough in it. Should rise in about 60 minutes and double in size.
7. Punch down the dough and leave in refrigerator overnight for best flavor.
8. Next day remove it from the fridge and cut dough into 6 equal pieces. Make each piece into a tight ball. Allow the 6 balls proper time to come to room temp.
9. Flour a work surface and roll out each ball into a 7x7inch square. Roll each square into tight rope. Allow those to rest for an additional few mintues.
10. Roll out each rope and then perform the braid of your choosing.
11. Allow the braided dough to rise an additional 30-45 minutes. Make egg wash and brush it with a couple coats during that time.
12. Preheat oven to 360 and bake for 30-40 minutes until internal temp is 205 degrees and the outside has a deep golden brown crust.
