Ingredients:

4 CUPS WILD PLUMS
SUGAR depending on juice count, 1 cup pre cup of juice
1 TSP LEMON JUICE
WATER to cover PLUMS

Method:
In a saucepan with thick bottom, add wild plums, no need to pit them if you are making JELLY.
Add water to cover plums and start to boil on a medium to high heat.
Stirring occasional BUT never leave pot unattended.
Wild plum’s will cook down for about 10 to 15 minutes, then strain through a strainer with cheese cloth.
After all juice have released, pour juice in measuring cup to count the amount of juice, then to ever one cup of juice you will need one cup of sugar.
Start the juice boiling on the stove top and then add sugar, put the timer on 20 minutes and remove any foam from the top of the juice and toss, use more time to boil while skimming the foam off the juice.
Stirring occasional and never leaving the pot unattended, until juice have completed its boiling stage and have condensed and stopped foaming.
TEST JUICE: By having a cold bowl, add a tsp fun of juice into bowl, then slide your finger down the juice and if it don’t close together its done.
Follow the sterilizing and sealing jars method, pour juice into each small jar or jar of choice, clean around rim and cap.
