🛒Ingredients🛒

~ Roasted Potatoes ~
• 1.5 lbs (680 g) (golden) potatoes, cut into 1-inch (2.54-cm) cubes
• 1 tbsp (14 g) beef tallow or coconut oil (or mix of butter and coconut oil), melted
• 1 tsp (6 g) salt
• ½ tsp (1 g) black pepper
• Other Spices (optional)

~ Meat Mix ~
• 2 lbs (908 g) 93/7% lean ground beef
• 4 tsp (20 g) grass-fed beef liver, grated from frozen
• 6 large eggs (whites and yolks separate)
• 2 garlic cloves, minced
• 2 tsp (12 g) salt
• Lemon juice to taste (optional)

~ Beanie Boys ~
• 1 lbs (454 g) frozen green beans
• 2 tbsp (14 g) sliced almonds
• 1 tbsp (14 g) butter
• Lemon juice to taste
• Salt to taste

~ Extras ~
• 1.5 c (225 g) cubed avocado, about 1.5 medium-sized
• 6 c (1,440 mL) homemade kefir*🥛

🥛*Homemade kefir can be replaced by store bought versions. Or replace with the same amount of whole milk or 1 oz (28 g) parmesan cheese (~30 fewer calories) to match the same amount of calcium.

👨‍🍳Instructions👨‍🍳

1. Preheat oven to 425°F (~218°C).
2. Combine all roasted potato ingredients in a large bowl. Add spice as desired.
3. Spread potatoes out onto parchment-lined baking sheet and bake for 30-40 minutes or until golden and crisp. (35 minutes is just right for me.)
4. Grate liver from frozen and microwave frozen green beans in a microwave safe dish for 6-8 minutes to thaw.
5. Crack the eggs and separate the yolks from the whites. Scramble the whites.
6. Cook and salt beef in pan on medium heat. Once almost fully cooked, add in the egg whites. Follow that with the beef liver.
7. Once the liver has been thoroughly mixed in and cooked, kill the heat and add in the yolks.
8. Remove meat mix from pan.
9. Roast almond slices in butter in same pan until lightly toasted and aromatic.
10. Add in the green beans, salt, and cook to incorporate flavors and evaporate excess water.
11. Remove from heat and add lemon juice to taste.
12. Portion out meals (6 total), and serve with ¼ of an avocado (~¼ c or 38 g) and a cup (240 mL) of homemade kefir.
