Air Fryer Chicken Stuffed With Rice and Dried Fruit

Not bad for my first attempt. I was blown away by the precision and speed. Not only can you roast but you can also dehydrate, air fry, grill, reheat and bake! I’m so late to the party 🤣

Here’s the recipe:

1 large oven ready free range chicken
200g medium grain rice. I used Egyptian rice.
1 litre hot water to soak the rice.
1 onion, sliced
50g roasted hazelnuts
50g roasted cashew nuts
50g dried figs
50g red dates or dried apricots
1/2 tsp ground Lebanese 7 spice
1/2 tsp cinnamon
1/2 tsp cracked black pepper
1tsp sea salt
500ml water
Zest of half a lemon

Fragrant oil:
100ml olive oil
1 clove garlic
1 good pinch of sea salt
1 tsp dried or fresh oregano
Black pepper to taste
