FISH AND CHIPS

Ingredients

Fish fillets 500 gm, marinate with
Garlic paste 1 tsp
Lemon juice 2 tbsp
Black pepper ½ tsp
Paprika ½ tsp
Chicken powder ½ tsp
Salt ¼ tsp
Mustard paste 1 tsp

For Coating

Dry flour ½ cup

Ingredients for Batter

Self-raising flour ½ cup
Vanilla custard powder 2 tbsp
Rice flour 3 tbsp
Baking powder ½ tsp
Yellow food color pinch
Salt ½ tsp
Black pepper ½ tsp
Chilled water to make thick batter
Oil to deep fry

Ingredients for Tartar Sauce

Finely chopped onion 2 tbsp
Pickled cucumber finely chopped 2 tbsp
Vinegar 1 tbsp
Lemon juice 1 tbsp
Salt ¼ tsp
Pepper ¼ tsp
Finely chopped parsley 1 tsp
Boiled egg white 1 grated
Mayonnaise 5 tbsp
French fries to serve

METHOD FOR FISH

Marinate fish with given ingredients, coat in dry flour, beat together all the ingredients for batter, dip each fillet in batter, deep fry till crisp and golden.

METHOD FOR TARTAR SAUCE

Mix all the ingredients together, serve with fish.

BUTTER MALAI TIKKA

Ingredients for Marination

Boneless chicken thigh 500 gm cut into big cubes
Ginger garlic paste 2 tbsp
Salt 1 tsp
Chili powder 1 tsp
Cayenne pepper 1 tsp
Allspice ½ tsp
Dried fenugreek leaves 1 tsp
Turmeric ¼ tsp
Black pepper ½ tsp
Roasted and crushed cumin 1 tsp
Hung curd 4 tbsp
Cream 1 tbsp
Papaya paste 1 tbsp
Lemon juice 2 tbsp
Oil 2 tbsp
Coal 1 piece

Ingredients for Malai Gravy

Butter 2 ounce
Green chilies 2 julienne
Fresh cream 200 gm
Cream cheese 2 tbsp
Black pepper ½ tsp
Chat masala ½ tsp
Dried fenugreek leaves ½ tsp

For Topping

Grated cheddar cheese ½ cup
Butter 1 ounce melted to drizzle on top

METHOD

Marinate chicken and keep it for 4 hours. Give dum of coal, bake chicken in oven on 170 D for 25 mins or cook in grill pan or bbq. Heat butter in a pan, fry green chilies for a few seconds, add cream, black pepper, cream cheese, dried fenugreek leaves, toss the cooked tikka in this cream, transfer them to an ovenproof dish, spread some cheddar cheese on top, put under the grill for few mins till cheese melts, drizzle melted butter and serve.
