Spaghetti Carbonara (160 mgs)
Ingredients:

• 8 ounces (225g) spaghetti or any pasta of your choice
• 4 slices of bacon, diced (you can also use pancetta or guanciale)
• 2 cloves garlic, minced
• 2 large eggs
• 1/2 cup grated Parmesan cheese
• Salt and freshly ground black pepper, to taste
• Chopped fresh parsley, for garnish (optional)
• Top with 2 tbsp of infused butter
Instructions:
• Cook the spaghetti in a large pot of boiling salted water according to the package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set aside.
• While the pasta is cooking, heat a large skillet over medium heat. Add the diced bacon and cook until crispy and golden brown, about 5-7 minutes. Remove the cooked bacon from the skillet and drain on paper towels, leaving the bacon fat in the skillet.
• In the same skillet with the bacon fat, add the minced garlic and sauté for about 1 minute until fragrant.
• In a small bowl, whisk together the eggs and grated Parmesan cheese until well combined.
• Return the cooked pasta to the skillet with the garlic and bacon fat. Remove the skillet from the heat to avoid scrambling the eggs. Pour the egg and Parmesan mixture over the pasta, tossing quickly and continuously to coat the pasta evenly. If the sauce seems too thick, gradually add some of the reserved pasta water until it reaches your desired consistency.
• Add the cooked bacon back to the skillet with the pasta and toss to combine. Season with salt and freshly ground black pepper to taste.
• Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley if desired.
