This year for Father’s Day, our friend Peter Ho is cooking a dry aged steak and pairing it with a nice bottle of wine!

He pre-seared the steak on a piping hot cast iron pan for no more than 30 seconds on each side and then cooled them down instantly in an icy water bath.

The steak is then transferred into the Anova Resealable Bags along with some rendered dry aged beef fat as well as clarified butter. He finds that the steak takes up the flavor from the fats nicely when pre-seared. Make sure the fats are solidified so the optimal result from the vacuum process can be achieved.
