|| Sikandari Raan Recipe || Indian-Spiced Leg of Lamb in Rich Creamy gravy ||

The official name of this ancient dish is Sikandari Raan, which translates to “Alexander’s Lamb.”
The story: Alexander the Great captured the Indian King Porus in battle, with great difficulty, around 300 BC. When asked how he wanted to be treated in captivity, Porus answered, “Like a king.” Alexander released Porus and agreed to be his friend. The barbecued whole leg of lamb was the highlight at the battlefield banquet held to celebrate the new legendary friendship
of the Great Alexander (or Sikandar) with Porus of Takshila.

So let's prepare a feast to treat us like Kings :)

Ingredients:

A whole goat or lamb leg (1.5 kg)

First Marinade
ginger(40gm), garlic(70gm), & 4-5 green chili paste,
raw papaya paste- 2 tablespoons,
Salt as per taste,
Red chili powder- Approx 2 tablespoons.

Second Marinade
Yogurt- 180 grams,
1 tablespoon of Garam Masala powder,
1 teaspoon of turmeric powder,
1 tablespoon of Kashmiri chili powder,
1/4th teaspoon of green cardamom powder,
1 tablespoon of Tandoor Masala powder
1 tablespoon of dry fenugreek leaves (Kasoori Methi),
3 tablespoon pre-heated mustard oil, clarified butter for basting.

Gravy
15-20 cashew nuts and almonds,
a piece of cinnamon, 2-3 bay leaves, 2-3 black cardamom,
a half flower of mace, 8-10 peppercorns, 7-8 cloves, 2-3 green cardamoms,
5-6 whole red chilies, 1/4 piece of nutmeg,
a teaspoon of cumin seeds, a teaspoon of kalpasi,
a teaspoon of coriander powder, a teaspoon of cumin powder,
a half teaspoon of turmeric powder, a half teaspoon of fennel powder,
a tablespoon of Kashmiri red chili powder,
1/4th teaspoon of ginger powder, 1 tablespoon of salt.
you can take as per your taste as well, a half teaspoon of Garam Masala powder,
4-5 big-sized onions that weight is approx 500 grams,
1 medium-sized tomatoes that weight is approx 150 grams,
approx 200 ml of mustard oil,
Coriander leaves for garnish.
