Ingredients

1 package (8-1/2 ounces) honey cornbread/muffin mix. You can use regular corn bread mix just add a bit of honey to mimic the batter on corndogs.

This chili cheese corn dog casserole combines convenient ingredients and some fresh ingredients to amp up the flavors.

1 tablespoon olive oil

1/2 cup chopped green pepper

1/2 cup chopped onion

Optional- 1/4 cup chopped celery

1 package (1 pound) hot dogs, cut into bite-sized pieces. We used beef franks.

1 can (22 ounces) baked beans

Optional 2 tablespoons brown sugar (we used beans with brown sugar already added)

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

1 cup shredded cheddar cheese, divided

Preheat oven to 400°.
Grease 8x8-in baking dish. Prepare cornbread batter according to package directions, set aside.

In a large skillet, heat oil over medium heat; add green pepper, onion and celery. Cook and stir until crisp-tender, 5-7 minutes. Stir in hot dogs; cook and stir until lightly browned, 3-4 minutes longer.

Remove 1/3 of hotdogs add to cornbread topping

Stir in beans, brown sugar, garlic powder and chili powder; heat through. Stir in 3/4 cup cheese.

Spoon hot dog mixture into prepared baking dish; top with corn bread batter. Sprinkle with remaining 1/4 cup cheese and Jalapeños optional

Bake, uncovered, until a toothpick inserted in the center comes out clean, 20-25 minutes or until goldenbrown and corn dog mixture is done. Let stand 5 minutes before serving.
