We are enjoying another sweet one tonight with Paul Burnette's Best Blueberry Muffins.

Paul was the bass player in Washington DC heavy metal band Darkest Hour for a decade between 2001 - 2011. He then went on to join Iron Reagan on bass duties. He is currently doing vocals and bass in Hewolf.

Ingredients:
8 tablespoons butter, at room temperature
1 cup of sugar
2 large eggs
1 tsp vanilla extract
2 teaspoons baking powder
1/4 teaspoon salt
2 1/2 cups blueberries
2 cups all purpose flour
1/2 cup milk
1 tablespoon of sugar mixed with 1/4 teaspoon ground nutmeg for the top

Method:
Grease muffin cups, if needed, or line with papers. Preheat oven to 375F (190C).
Stir the butter until creamy. Stir in the sugar until the mixture is pale and fluffy. Stir in the eggs, one at a time. Stir in the vanilla, baking powder and salt.
Smash 1/2 cup of the blueberries and stir into the mixture.
Fold in half the flour with a rubber spatula. Fold in half the milk. Fold in the remaining flour and milk. Fold in the rest of the blueberries.
Drop the batter into the muffin cups. Sprinkle with the sugar/nutmeg mix.
Bake for 25 minutes, or until golden brown.
Cool the muffins for 10 minutes before removing from the pan.
