S1Ep82-Classic Cantonese Sticky Rice with Chinese Sausage and Mushrooms 臘味糯米飯

RECIPE BELOW: This classic sticky rice has an unconventional method of not stir frying all the ingredients together which creates a much lighter dish. It's also a popular rice dish served at Dim Sum restaurants. Now you can cook it at home, it's absolutely delicious!

Serves 8-10

Ingredients:
• 1 rice bowl size short grain sweet rice (Koda farms)
• 1/2 rice bowl jasmine rice (Three Lady)
• 1/2 pkg/4 Chinese sausage (KYJ chicken & pork)
• 1/2 pkg/7 oz smoked Hunan ham (Hsin Tung Yang) or other type preserved pork
• 12-14 dried Chinese mushrooms (pre-soak in hot water for 45-60 mins)
• 2 pc rock sugar or 1 Tbsp organic cane sugar
• 1-8 oz can waterchestnuts
• 3 green onions, minced
• 1/3 bunch cilantro, minced
• ~1 Tbsp Shaoxing wine-more or less to taste
• ~1 Tbsp Sesame oil-more or less to taste
• ~1 Tbsp Soy sauce-more or less to taste
• ~1 Tbsp Oyster sauce-more or less to taste
• ~1 Tsp White pepper-more or less to taste

Mushroom braising liquid:
• All of the mushroom soaking liquid
• 1/2 C or more water to cover the mushrooms
• 1 Tsp oyster sauce
• 1 Tsp soy sauce
• 1 Tsp sesame oil
• 1 Tbsp Shaoxing wine
