Easy Mexican Breakfast Migas 🍳

An easy breakfast recipe for all of you to enjoy! All you need is a few tortillas and eggs. Posted this recipe several months ago but made it crispier this time around. This dish is not to get confused with chilaquiles, which involves cooking the crispy tortillas in a sauce while still in the pan. Cheers!

Servings: 2

Ingredients:
-8 corn tortillas, cut into strips or small 1/2”squares
-4 tbs oil for cooking
-3 whole eggs
-salt and pepper to taste
-additional toppings (lime, avocado, cilantro, fresh salsa, etc.)

Instructions:
-heat a nonstick pan on medium heat
-add our oil and wait for it to heatup
-toss in our cut tortillas and mix around for several minutes until golden brown and crispy; mix and toss often to prevent burning
-crack eggs straight into the pan
-mix well for 1 minute until the egg is fully cooked and scrambled
-salt and pepper to taste
-quickly plate the migas and top with desired toppings
-enjoy while warm!
