Garlic Salmon with Cilantro-Mango Salad

Ingredients:
2 large salmon filets, skin removed
1/2 cup soy sauce
salt
3 garlic cloves, finely minced
2 tablespoons olive oil
1/4 cup packed brown sugar
1/4 cup water
2 large, ripe avocados, diced
1 cup diced fresh tomatoes
1 cup corn, fresh or canned
1/2 cup ripe mango, diced
3 green scallions, diced
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
salt to taste

Instructions:
1) Coat salmon with _ cup soy sauce then cover and refrigerate for 1 hour.
2) Combine all ingredients necessary for sauce (garlic, 1/4 soy sauce, oil, brown sugar, water) in small saucepan, whisk and heat over low/medium heat. Bring to a simmer and continue cooking for 8 to 10 minutes until sauce thickens. Remove from heat and set aside.
3) In a large bowl, combine all ingredients necessary for salad (avocados, tomatoes, corn, mango, scallions, cilantro, lime juice, salt). Toss gently, cover and set aside.
4) Preheat oven to 350F
5) Preheat over-safe frying pan over medium heat. Add a teaspoon of olive oil. Lightly sear salmon, turning once.
6) Transfer pan into preheated oven and bake for 6-9 minutes, depending on thickness.
7) Serve fish immediately topped with a tablespoon of garlic sauce and generous amount of diced salad.
