Shortbread cookies with berries
Quick cookies with berries - a good old recipe, my mother used to cook it
Ingredients:
margarine - 100 gr;
flour - 2 tbsp;
chicken eggs - 1 piece;
granulated sugar - 170 gr;
berries - 250-300 gr;
baking soda - 0.5 tsp;
salt - to taste
Cooking method:
I really love this recipe, it’s simple, easy and delicious.

Leave the margarine at room temperature until it becomes soft. Place in a bowl and mash with a fork. Add the egg and add sugar.
First, grind with a fork until smooth, then beat with a mixer.
If you grind the sugar and butter together, the mixture becomes homogeneous.
And with margarine - flakes.

Add a pinch of salt and soda. Mix well.

Gradually add flour and knead the dough. The dough should be dense. I roll it into a ball and put it in the refrigerator.

Thawed berries

I add about 70 grams of sugar and a little cinnamon (whether you add it or not is up to you). I stir. I put it aside.

I take the dough out of the refrigerator and grate one part (a little less than half) on a coarse grater. I cover it and put it in the refrigerator.

I roll out the remaining dough into a circle, because I am going to bake it in a round pan with a low side so that the filling does not leak out.
When you roll out, the dough will break and tear - this is normal. Just adjust it with your hands. It is better to roll out on parchment; with it it is easier to transfer the dough into the mold.
Try to lay out the filling without excess berry juice, stepping back 1-1.5 cm from the edge.

Sprinkle the grated dough shavings on top.

Place in an oven preheated to 180-200 C for 15-20 minutes. Bake on medium level.
Ready.
Take it out and let it cool.

Cut into portions: squares, triangles or diamonds.
The cookies are ready!
