Pithla/ Jhunaka /Jhunka With English Sub-Titles|#Manipal Kitchen | Maharashtrian Pithla Recipe | Besan Curry Recipe | Pithla is a staple of Mahrashtra , North karnataka and a few of northern parts of the country. It is spicy, tasty, easy to make and can be made in a variety of ways. Consistency of pitla can be changed according to the way you want to enjoy. It can be runny, thick curry-like or even dry. It is made of besan atta dissolved in water, with seasoning and adding a couple of veggies like the green peas, tomato, onion which will enhance the flavour of the dish. The dry version of the dish is called Zunka. Pitla is made runny when it is seved with rice. It is made thick curry like or dry zunka when it is served with jowar roti or bajra roti.

INGREDIENTS OF SEASONING:
1. Cumin seeds - 1 tsp
2. Mustard seeds - 1 tsp
3. Green chili slit - 1
4. Curry leaves - a few
5. Chopped onion - 3/4 cup
6. Salt - 1 tsp(as needed) (STIR)
7. Chili powder - 1/2 tsp
8. Turmeric powder - 1/2 tsp
9. Asafoetida powder - 1/2 tsp(STIR)
10. Green chili garlic paste - 1 tsp(STIR)
11. Chopped tomatoes - 1/2 cup(STIR AND COOK TILL MUSHY)
12. Chopped spring onion greens - 1/2 cup
13. Green peas - 1/2 cup(STIR AND COOK TILL SOFT)
14. Besan atta - 2 tbsp(SIEVED AND DISSOLVED IN WATER EXTRA WATER 1 AND 1/4 CUP FOR THE DISH OR AS NEEDED)

INGREDIENTS OF GARNISHING:
15. Lemon juice - 1 tsp
16. Chopped coriander leaves - as needed

PROCEDURE:
Place a wide pan with 4-5 tsp of cooking oil in it on medium flame. When heated, add cumin seeds , on crackling add mustard seeds to it. When it crackles, add curry leaves, green chili garlic paste to it and stir. When fried add chopped onions to it and stir. Add salt and stir, cover and cook till onion is transparent. Add tomatoes, cover and cook till mushy. Add chopped spring onion greens , green peas and stir. Add besan dissolved in water and also add required quantity of water to cook and adjust consistency of the dish and bring it to boil simmering the flame stiring at regular intervals. Else the dish may burn.Check for salt, Add lemon juice and chopped coriander leaves. Enjoy with Roti, chapati etc..
