Kaju Masala Recipe with step by step
It is delicious restaurant style recipe from Punjabi cuisine made with roasted cashewnuts,spices cooked In onion-tomato paste.It is very tasty and easy to make serve with naan, chapati and rice also.
यह भुने हुए काजू, मसालों के साथ पकाया जाने वाला पंजाबी व्यंजनों का स्वादिष्ट रेस्तरां स्टाइल रेसिपी हैप्याज-टमाटर के पेस्ट में। यह नान, चपाती और चावल के साथ भी परोसा जाता है I
INGREDIENTS :
For The Ground Paste:
1 Big Onion Sliced
2 Green Chillies
3 Tomatoes Roughly Chopped
5-6 Whole Cashews / Kaju
1 Tsp Melon seeds / Magaj Seeds
1 Whole Dry Red Chilli
1/2 Tsp Cumin seeds / Jeera
1 Bay Leaf / Tej Patta
2-3 Cloves / Lavang
2 Green Cardamom / Elaichi
4-5 BlackPeppercorn / Kali Miri
1/2 Inch Piece Of cinnamon Stick / Dalichini
2 Tbsp Oil
1/2 Tsp salt
For the Curry :å
1 Cup Cashewnuts / Kaju(Halves OR whole)
2 Tbsp Oil +1 Tbsp Butter
1/2 Tsp Cumin Seeds / Jeera
1 Bay Leaf / Tej Patta
1 Tbsp Ginger-Garlic Paste
1/4 Tsp Turmeric Powder
1 Tbsp Red Chilli Powder
1 Tbsp Coriander Powder
1 Tsp Garam Masala
1 Tsp Dry Fenugreek Leaves / Kasuri Methi
1/2 Tsp Sugar
1 Tbsp Butter
2 Tbsp Fresh Cream (Optional)
1/4 Cup finely Chopped Coriander Leaves 
Salt To taste
METHOD :
1.To prepare the ground paste,
   Soak the 5-6 cashews and melon seeds in hot water for 5-10 minutes
  Heat 2 Tbsp Oil in a pan on medium heat
2.Add the cumin seeds, bay leaf, cloves, dry red chilli
   Cardamoms ,cinnamon sticks and blackpeppercorn
   Saute till the seeds crackle
3.Add the sliced onion, green chillies
   Saute till the onion turns golden
4.Add the chopped tomatoes, the soaked cashews-melon seeds,
   Salt and mix well 
5.Cover and cook it for 4-5 minutes on low-medium heat
   Stir at the intervals till the tomatoes become soft
6.off the flame
   Remove in a mixer jar and leave it for 5 minutes to cool
7.Once cooled, grind it to a fine, smooth paste
   Add water as required to grind
8.Remove the ground paste in a small bowl
    Keep aside
9.For the curry,
   Heat 1 Tsp Of butter in a pan 
10.Add the cashews and roast them till golden
     Then remove in a bowl
11.Heat 2 Tbsp of oil and 1 Tbsp of butter in the same pan
12.Add the cumin seeds and bay leaf
     Saute till the seeds crackle
13.Add the ginger-Garlic Paste
     Saute on medium flame for a minute
14.Add the turmeric powder, red chilli powder,
     Coriander powder and mix well on low flame for few seconds
15.Then add the ground paste and mix well
     Cover and cook it for 4-5 minutes on low flame
16.Add the roasted cashews and mix
     Add 1+1/2 Cup water in it and mix
17.Cover and cook it 5-6 minutes on low-medium heat
18.Add the sugar,kasuri methi, fresh cream and butter
     Immediately, stirr it well on low flame
19.Add the Garam Masala and salt as per taste
     Mix it again
20.Cover and cook it for 4-5 minutes on low flame
21.Finally add the coriander leaves and mix
     Off the flame
22.Kaju Masala Curry is ready to serve
     Serve hot the curry with naan, paratha ,chapati OR a rice
