HOW TO DRY A LOT OF THE BEST FIGS EVER*

pick the figs early in the first morning light, or the evening before.
it's more rewarding to share the fun with a few beloved earthlings.
best to pick at least once a day and "clean" the tree from all ripe figs, otherwise insects and birds see it as an invitation to party (lots of copulating).
signs of FullyRipeness: fruit is soft like that of a breast of a mature woman (not a minor), stretchmarks are beautiful, if fully ripe - figs will "look" down (did i say mature woman?!) and no milk will drip (naturally weaned off).
if you picked by mistake less than FullyRipe - no big deal, will still be delicious after drying. don't eat fresh though.
if figs are fermented/infested - also no worries! put them out in the sun and it will take care of itself and even have a more rich of a taste.
do not fear to collect plenty, a lot more than you imagine. remember it is 80% water, so this means it will shrink a lot in volume and height.
open each one and expose the lushness inside. arrange tightly even with a bit overlap - they will shrink quickly.
a hard mesh with large holes is easy to clean, the figs tend to stick to a dense window mesh.
there are figs that are already open on the tree - just put them out to complete the natural drying.
flies and ants are no issue at all, on the contrary - they tend to eat clean all other insect larva!
the sun also causes any insect to evacuate.
at night it's best to cover or move the figs under a roof. this way they wont re-accumulate moisture.
if it rains, also cover ..
in the morning take out again, it usually takes at least 3 sunny days to dry enough for prolonged storage.
the ones that are only halfway dry are quite a treat... take into account that you probably will eat a lot of them, so again, pick PLENTY.
after storage, prevent moths or other insects by freezing the whole bucket/container with the dry figs for 48 hours minimum - this halts any infestation. after a few months, if you open the container and see the first sign of an insect, again just put the whole thing back in the freezer for 48 hours.
the drier the figs, the longer they will last.
if the figs are too dry for you, soak them a little in water.
for a delicious fig tea - soak in water for several hours and then filter. the remaining soft figs can be ground in a blender/mortar&pestle to into a delicious fig spread.
