What My Kids Eat in a Day recipes

BREAKFAST: Granola Cereal

Preheat oven to 325F

Into a large bowl add 3 cups old fashioned oats, 1 cup chopped nuts, ¼ cup flax seeds. ¼ cup hemp seeds. Toss and set aside. Into a small pot add ¼ cup coconut oil and ¼ cup honey, let simmer on low heat. Remove from heat and add 1 tsp vanilla, 1 tsp cinnamon and a pinch of salt. Slowly pour sauce into the oat mixture and combine evenly. Spread mixture on to a parchment lined baking sheet. Press down gently. Bake for 15 minutes. Stir then press down gently again. Bake for another 15 minutes. Let cool completely before breaking it apart. Serve with milk or yogurt.

This recipe does not make chunky pieces. If you prefer yours chunkier, increase the coconut oil and honey to ½ cup each.


LUNCH: Teriyaki Chicken Wings

24 chicken wings
Salt
Garlic powder
White pepper
2 tablespoons olive oil

½ cup flour
¼ cup cornstarch
Pinch of salt

Teriyaki sauce:
1 tablespoon olive oil
4 garlic cloves, minced
1 inch piece ginger, minced
½ cup brown sugar
½ cup soy sauce
¼ cup rice vinegar
¼ cup mirin
1 tsp sesame oil

Cornstarch slurry:
1 tablespoon cornstarch
2 tablespoons water

Directions:
Into a large bowl, combine the wings, salt, garlic powder, white pepper and olive oil. Toss to combine. Into a separate bowl, whisk together the flour, cornstarch and salt. Dredge the wings into the flour, shake off excess and place onto a baking sheet. Let sit at room temperature for 15-20 minutes. Spray with olive oil and place into an air fryer basket. Cook at 400F for 15 minutes. Flip then cook for another 15 minutes.

To make the teriyaki sauce, into a large skillet, add the olive oil then sautee the minced garlic and ginger for a few minutes. Add the brown sugar, soy sauce, rice vinegar and mirin. Let it come to a simmer for a few minutes. Combine the cornstarch and water, mix until the cornstarch has dissolved. Pour into the skillet and cook until sauce is slightly thick. Remove some sauce for dipping then toss the chicken wings. Combine until all the wings have been coated with the sauce.

SNACK: Apple with Yogurt + Peanut Butter Dip

¼ cup yogurt
2 tablespoons peanut butter
Pinch of cinnamon
Honey to taste

Mix together and serve with sliced apple


DINNER: Pasta with Shrimp, Tomatoes and Spinach

10 oz pasta
1.5 lbs peeled and deveined shrimp
2 tablespoons olive oil
20 oz cherry tomatoes
4 garlic cloves, sliced thinly
2 tablespoons butter
1.5 tsp salt
1 tsp pepper
½ tsp chili pepper flakes, optional
1 tsp oregano
Handfuls of spinach
Pasta water

Directions:
Cook the pasta al dente, save about a cup of pasta water.

Into a large skillet, heat the olive oil and add the cherry tomatoes. After about 5 minutes and the tomatoes have slightly softened, gently smash with a spatula and cook for a few more minutes. Add the sliced garlic and cook for a minute. Melt the butter, add the shrimp and seasoning. Check for seasoning, add whatever you think it needs. Toss to combine and cook for about 4-5 minutes. Add about ½ cup pasta water and let simmer for a minute or so. Add the pasta and spinach, toss until the spinach has wilted. Add more pasta water if necessary.

DESSERT: “not fried chicken” ice cream
