Hi everyone, today we will be making Nut Meringue Cookies using only 4 ingredients.

Recipe for 20 Cookies:

1 1/3 cup nuts, raw
2 egg whites
2 pinches of salt
2/3 cup sugar

1)Preheat oven to 180C. Line baking sheet with baking paper. Toast nuts for 8-10 minutes or until golden brown. Remove from oven and let cool completely before grinding. Pulse in food processor until coarsely chopped.

2)Reduce oven temp to 150C. Beat egg whites with salt until stiff peaks form. Gently fold in sugar and chopped nuts until well combined.

3)Using a tablespoon, spoon the batter onto a parchment lined baking sheet (spacing them 2 inches apart). Bake cookies until golden brown 16-18 minutes.

4)Let cool on baking sheet for about 10 minutes for easier removal. Transfer cookies to wire rack to cool.
