Nothing beats a salad when the weather is good! I'm going to show you a beautiful zingy squid salad packed full of flavour and there’s only a few ingredients in there.

🧑‍🍳 INGREDIENTS:

400g cleaned squid, with tentacles
• 1 Lebanese cucumber
• pinch of salt
• splash of rice wine vinegar
• ½ bunch of coriander
• ½ bunch of mint
• splash of neutral oil
• 40g Bull Head BBQ Sauce
• 40g Singlong Nasi Lemak Sauce
• 1 lime, juiced
• 6 Maxi Brand Cassava Crackers
• oil for deep frying

🧑‍🍳 METHOD:

Cut squid on an angle into 1-2cm slices.

Quarter the cucumber lengthwise and remove seeds. Toss with a pinch of salt and a splash of rice wine vinegar.Cut the stems from the coriander and slice into batons. Pick the leaves from your coriander and mint, chopping roughly.

Heat a splash of oil in a saute pan until smoking hot. Add BBQ sauce and nasi lemak sauce and fry briefly until aromatic. Add lime juice, cucumber and coriander stems. Remove from heat and transfer to a mixing bowl, along with mint and coriander leaves. Fry cassava crackers at 180°C until puffed and crispy. Once cooled, crush cassava crackers into bite sized pieces. Give everything a quick toss and serve.
