I wanted to give Trader Joe's Santa Maria Tri-Tip Roast the reverse sear treatment. If you're unfamiliar with reverse searing, it's starting a steak or, in this case, a tri tip in a low oven or grill and finishing in a hot pan to create the perfect crust.

This video will show you how to reverse sear tri tip in both your oven and on a Traeger grill or pellet smoker. It also takes the extra step of slicing and combining with onions and peppers to make the perfect filling for tacos, burritos, and more.

For my macro counters out there, this recipe makes 10 4-ounce servings with 190 calories, 19g of protein, 3g of carbs, and 10g of fat. You'll need to add the macros for your tortillas and other fixin's, of course.
