Ingredients
For the soup base:

2 tbsp olive oil or butter
1 medium onion, finely chopped
2 medium carrots, sliced or diced
2 celery stalks, chopped
2–3 garlic cloves, minced
1 tsp dried thyme
1 tsp dried oregano
1 bay leaf
6 cups chicken stock or broth
1 lb (450g) boneless, skinless chicken breast or thighs
For seasoning:

Salt and black pepper (to taste)
Optional add-ins:

1 cup egg noodles, rice, or diced potatoes (for a heartier soup)
Fresh parsley or dill for garnish
Lemon wedges for serving
Instructions
1. Prepare the Base
Heat olive oil or butter in a large pot over medium heat.
Add the chopped onions, carrots, and celery. Sauté for 5–7 minutes until softened.
Stir in the minced garlic, thyme, and oregano, and cook for another minute until fragrant.
2. Add the Liquid and Chicken
Pour in the chicken stock or broth.
Add the bay leaf and the raw chicken pieces.
Bring the soup to a gentle boil, then reduce the heat to a simmer.
3. Simmer and Cook the Chicken
Let the soup simmer for about 20–25 minutes, or until the chicken is fully cooked (internal temperature of 165°F / 74°C).
4. Shred the Chicken
Remove the cooked chicken from the pot and place it on a cutting board.
Use two forks to shred the chicken into bite-sized pieces.
Return the shredded chicken to the pot.
5. Add Optional Ingredients
If using noodles, rice, or potatoes, add them at this stage.
Simmer for an additional 8–10 minutes (or until the add-ins are tender).
6. Season and Serve
Season the soup with salt and pepper to taste.
Remove the bay leaf before serving.
Garnish with fresh parsley or dill, and serve with lemon wedges on the side for a bright, tangy flavor.
