To celebrate Val/Galentine’s day coming up, let’s make an EASY 9-Ingredient No-Bake Strawberry Cheesecake that is Vegan, Gluten-Free and Grain-Free. It’s easier than you think as it surprised me as well when making it! Any guilt-free dessert is my type of dessert, so hope you enjoy this recipe! xox

Crust:
1/2 cup almonds
10 medjool dates, pitted
2-3 tbsp coconut oil
** blend/pulse in blender or food processor until it forms a sticky ball

Filling:
1 cup raw cashews, soaked overnight
1 cup strawberries
3 tbsp fresh lemon juice
1 tsp vanilla extract
4 tbsp coconut oil
1/2 cup coconut cream
1/4 cup maple syrup
**blend and pour on top of crust layer. Cover with tin foil and freeze up to 4 hours or overnight. Garnish with fresh strawberries. Thaw before serving.
