Don’t you second that?

Plum cake is a traditional dish and its recipe changes from country to country. What is even more special is how people tend to start prepping for the making of the cake very prior to even actually making it. The dry fruits do the magic here! The irresistible flavour is the infused dry fruits and nuts
with orange juice or any alcohol for that matter.

To add a little bit history, Plum cakes originally refer to the early type and style of fruit cake in England which is served widely across the globe, around the holiday season and festival of Christmas. You can serve it post dinner as a dessert or just along with the evening cup of hot tea.

INGREDIENTS :

Orange juice
Dry fruits
All-purpose flour
Baking soda
Baking powder
Cloves, cinnamon & nutmeg
Butter
Oil
Brown sugar
Egg
Vanilla essence
Cashew nuts

PREPARATION :

1. In a bowl of 1 cup orange juice, add mixed dry fruits and let it soak for 6 hours.

2. In a tea pan, caramelize 1/2 cup sugar slowly by making sure you don’t extra burn it.

3. To this add 1 cup of boiling water and let it boil until it reduces to half. Let it cool down completely.

4. Grind 5 cloves, 1 nutmeg, 1 ½ inch cinnamon.

5. Now in a bowl, sieve together 1½ cup all-purpose flour, ¼ tsp baking soda, 1 tsp baking powder, one pinch salt and add 1 tsp of spice powder. Mix them all together.

6. In another bowl add 100 grams of butter and ¼ cup of vegetable oil and beat them together for 4-5 mins using an electric blender or 8-10 mins by hand.

7. Now add 1/2 cups of brown sugar and beat.

8. Add 3 number of egg yolks and beat until smooth and fluffy, and to this add the prepared flour.

9. Gently fold all the dry ingredients and then fold in the caramelized sugar.

10. Now add soaked dry fruits and add 1 tsp of vanilla essence to it. Add chopped cashew nuts for a final touch and mix them well.

11. Beat 3 egg whites together that creates a foamy texture and add this to our mixture and combine them well using a cut and fold method.

12. Preheat the oven to 180 degrees and pour the mixture to a lined 8 inch cake pan. Bake in 170 degrees for 30 to 40 minutes or till the toothpick comes out clean.

If the cake is unglazed, you can store it for a month. All set to celebrate !? Happy Baking! ♥️💃🏻
