Fast pasta is an essential dish for those nights when you’re exhausted or just can’t muster up a culinary delight even in your mind, let alone from the foods on the shelves when you stare into the fridge.

Carbonara is one of the fastest, and made a bunch of different ways. My recipe has the added vegetables that you don’t usually see, but of course, I’m going to add them! I’ve got a bit of broccoli hanging around, so I’m going to add in some peas with it to make up what’s needed.

This can be dairy free if you’d like a change or need it dairy free.

Sprout Right Spaghetti Carbonara
Gluten-free ~ Nut-free ~ Wheat-free
Serves 4
This is a fast, energy-rich dinner that’s perfect for all the sports players and watchers in the family. Use coconut milk instead of whipping cream to make this recipe dairy-free, and don’t forget to season it well. Save some of the spaghetti cooking water to add when reheating this for tomorrow’s lunch.

1 package (12 ounces/340 g) dried rice or kamut spaghetti
4 slices Canadian bacon, cubed
1 head broccoli, cut into small florets
2 egg yolks
¼ cup (60 mL) canned coconut milk or whipping cream
5 to 10 pitted olives, chopped
2 tablespoons (30 mL) capers
⅓ cup (75 mL) grated Parmesan or pecorino cheese
Salt
Black pepper

1. Bring a large pot of salted water to a rolling boil over high heat. Drop the pasta into the water and cook for 10 minutes (follow package instructions for exact timing) or until the noodles are soft with a remaining bit of firmness when bitten.
2. Meanwhile, cook the bacon in a frying pan until crispy, about 7 to 10 minutes. Add the broccoli and cook for an additional 3 minutes.
3. In a small bowl, mix together the egg yolks and coconut milk.
4. Drain the cooked pasta in a colander placed over a large bowl and reserve the pasta water. Return the pasta to the large pot.
5. Pour the egg mixture over the pasta and toss quickly with 2 forks or tongs.
6. Add the bacon and broccoli mixture, olives, capers, and cheese and toss again, adding 1 tablespoon (15 mL) of the reserved pasta water at a time to loosen if noodles stick together. Season with salt and pepper, to taste.
7. Divide among plates or shallow bowls and serve with a leafy green salad with strawberries and Salad Dressing (page 000).

NUTRITIONAL INFORMATION
Rice spaghetti is a gluten-free option. This dish is a good source of vitamin D, calcium, choline, and folate.
