6 Meals For 1 Person From Aldi Using $5.26 - Vegetarian Edition

Aldi Grocery List:
Garbanzo beans - $0.76
Cous cous - $1.05
Mashed potatoes - $0.69
Tomato soup- $0.68
California medly- $0.99
Pasta Shells with white cheddar- $1.09
______ Total = $5.26

Prepare cous cous and mashed potatoes according to boxes.

Greek Inspired Chickpeas Over Cous Cous:
1/8 cup chickpeas drained
1/8 teaspoon dried chopped onions
1/4 cup chopped veggies
1/4 cup tomato soup condensed
1/8 teaspoon chopped parsley
salt and pepper to taste
1 tablespoon oil
Combine ingredients in pan and heat through. Serve over prepared cous cous.

Spanish Chickpeas Over Cous Cous:
1/8 cup chickpeas drained
1/8 teaspoon garlic powder
1/8 teaspoon dried chopped onions
1/8 teaspoon parsley
1 tablespoon oil
1/8 teaspoon paprika
A pinch of red pepper flakes
1/8 cup tomato soup condensed
salt and pepper to taste
Saute oil, spices, and chickpeas over high heat for one minute. Add remaining ingredients and reduce heat. Heat until completely heated through and serve over cous cous.

Pan Roasted Chickpeas And Veggies Over Mashed Potatoes:
1/8 cup chickpeas drained
1 tablespoon oil
1/8 teaspoon chili powder
1/8 teaspoon thyme
salt to taste
1/4 cup chopped veggies
Heat pan until hot, add veggies, spices, and chickpeas. Stir in Pan until chickpeas are browned slightly, add in oil and veggies and continue sauteing until veggies are cooked through. Serve over mashed potatoes.

Chickpea Curry Over Savory Potato Pancake:
Curry -
1 tablespoon oil
1/8 teaspoon dried onions
1/8 teaspoon garlic powder
1/4 teaspoon curry powder
1/4 teaspoon cumin
1/8 cup tomato soup condensed
1 tsp cheese powder from the Mac and cheese packet
1/8 cup chickpeas
salt and pepper to taste
1/4 cup veggies
Savory Pancake -
1/4 cup prepared mashed potatoes
1/8 teaspoon garlic powder
1/8 teaspoon parsley
1/8 teaspoon onion flakes
1 tablespoon oil
2 Tbs water
Heat oil and spices in a pan over medium heat, add in your chickpeas and stir. Add in remaining ingredients for the curry and stir until thoroughly heated through and fragrant. Take off the heat prepare your mashed potato pancake using the mashed potatoes garlic powder parsley onion flakes and water. Stir to combine. Heat oil and pan then pour the batter mixture into the hot pan allow to brown on both sides flipping like a pancake (about 1 minute on each side). Place the savory potato pancake on a plate and serve beside the curry that is prepared.


Mashed Potatoes With Chickpea Gravy:
Gravy -
2 tablespoons cheese sauce from Mac and cheese pouch
1/8 teaspoon garlic powder
1/8 teaspoon onion flakes
1/2 cup water
salt and pepper to taste
1/8 teaspoon parsley Flakes
1/4 cup veggies
1/4 cup chickpeas
Combine gravy ingredients (except veggies and chickpeas) in skillet while stirring for 2 minutes. Add veggies and chickpeas. Continue reducing until it has reached desired thickness. Pour over prepared mashed potatoes and serve.

Chickpea Mac and Cheese:
3 cups water
Packet of pasta from Box Mac and cheese (about 2 cups dried)
1/4 cup veggies
1/4 cup chickpeas
1/8 teaspoon parsley
Boil water then add shells from Mac and cheese cook for 10 minutes or until just tender. Do not drain. Add remaining part of Mac and cheese packet or all of the packet if you did not use it as we did in other recipes. Add chickpeas and veggies and seasonings. Stir until thickened and serve.
