A tasty, easy-to-prep rice bowl made with Greenery Kitchen's Korean BBQ! The BBQ "pork" is saucy and spicy and adds a "meaty" bite to the fried rice. We stir-fried this with corn, carrots, and green peas, but you can opt to use other veggies as well. We served this with a side of kimchi for extra heat! Literally only 20 minutes to make and so delicious!

INGREDIENTS:
1 cup vegan Korean BBQ
1 onion, chopped
1 cup frozen veggies
4 cups day old rice
1 tsp gochujang (optional)
sesame seeds, to garnish (optional)
kimchi (to serve)

1 Cook Korean BBQ until heated through about 2 minutes, drain sauce in colander and set aside for later. Chop "meat" into small pieces. Set aside.
2 In a large wok or pan, over medium high, add onion. Sprinkle with salt. Once translucent, add the veggies and sautee for about 3 minutes. Add in the rice, gochujang, and Korean BBQ sauce. Mix until the rice is coated with the sauce. Season with salt and pepper. Sprinkle with sesame seeds. Add in the meat and toss to combine.
3 Serve with a side of kimchi, sliced cucumber, and a sprinkling of spring onion.

YIELD: 4-5 servings
