Ingredients:
2 pork cutlets (boneless!!!!)
1-2 cups flour
6-12 tablespoons breadcrumbs
3-6 tablespoons Pecorino Romano/Parmigiano Regianno cheese
Fresh parsley chopped
2 eggs (dependent on the size of your cutlets)
¼ fresh lemon(optional, helps take egg flavor our of egg wash)
Sunflower(preferred) or Extra virgin olive oil

Pork Milanese needs super flat and smooth cutlets! we'll need to use a mallet to flatten the meat.
1. Using the flat part of your meat mallet, hit the pork cutlets making them smooth, wider and flattening them out.
2. Place pan on stove with the heat on medium and once warm, add a good amount of oil as you this process is called shallow frying for the pork Milanese. I like the oil around 325-350Degrees F.
3. In a bowl, combine the breadcrumbs, pecorino cheese and parsley & mix together well.
4. To the same bowl add a sprinkle of salt and some pepper & mix again.
5. In a separate bowl, whisk your egg/s and add fresh lemon juice to this.
6. Pour flour into another bowl and spread it out as evenly as you can.
7. Coat each pork cutlet in the flour then the egg and finally, the breadcrumb mixture, making sure to sprinkle extra on top if you need to so that there is a thick layer of breadcrumb to fry.

**To test and make sure the oil is ready, take a little bit of breadcrumb and place in pan. If it starts to fry it is ready!**

8. Place the pork cutlet in the pan and shallow fry for a 45 seconds to 1.25 minutes or until it turns golden brown, then turn and repeat on the other side.
9. Once the pork Milanese cutlet is ready, transfer it onto a flat plate lined with paper towels to absorb oil
10. Serve!!!

With this dish I like to serve with a nice Pasta Carbonara or Cacio e Pepe, a delicious accompaniment to the most amazing pork dish!
