Ingredients
500 grams karela/bitter gourd
oil for deep frying & 2 tbsp for making the sabzi
4 medium sized chopped onions
1 bowl dahi/yogurt
2 tsp coriander powder
1 tsp amchur/mango powder
1/2 tsp red chilli powder
1 tsp salt to mix in karela
1/2 tsp salt to make sabzi

Method
1. scrape off the spiky skin & wash them. chop off the ends & cut into medium thick rounds
2. sprinkle 1 tsp salt on the chopped karela & mix well. let stand for 30 minutes
3. wash the karela thoroughly under running water & squeeze out the water. let the karela sit in a colander to remove any excess water
4. heat oil for frying. when hot fry the karela till light brown
5. remove the oil. add 2 tbsp oil in a wok/kadahi & let it heat up
6. add the sliced onions & saute till light pink
7. add the fried karela & mix well.
8. add the salt, coriander powder & red chilli powder. mix well & stir cook till karela are soft
9. add the amchur & dahi & mix well. cook till the water in the yogurt dries up
10. transfer the ready dahi wale karele to a serving dish
