Life Changing Potatoes
(Serves 4–6)

✨ Seasoning Mix (lasts 2 months in a jar):

2 tablespoons salt

1 teaspoon black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

3 teaspoons paprika

2 teaspoons dried parsley or marjoram

½ teaspoon celery salt

✨ Potatoes:

5–6 Yukon gold potatoes, peeled and diced

1–2 teaspoons cornstarch

Neutral oil (vegetable, safflower, or avocado)

Directions:

Heat oven to 425°F.

Toss diced potatoes with oil and cornstarch directly on a sheet pan. Don’t overcrowd.

Sprinkle a generous amount of the seasoning mix and toss again.

Roast for 35–50 minutes, stirring halfway through until deeply golden and crisp.

Add a pinch more seasoning if desired and serve hot.
